The cellar

Since its beginning, Cantina Ma.Ri.Ca. has adopted the most modern technologies for winemaking, in respect of the quality of the grapes, thus allowing to enhance the organoleptic characteristics of the wines. Furthermore, the commitment of expert winemakers and a scrupulous observance of the hygienic conditions have always been important means to achieve the company qualitative aim.

Outside, the cellar is divided in two, in order to facilitate the processing of the white grapes on one side of the building and the red grapes on the other side. Therefore there are two hoppers for the delivery of the grapes, three macerators for the vinification of the red grapes, and vertical fermenters for the vinification of the white grapes. The vats are all temperature controlled, and are supplemented by a pneumatic press to ensure the soft pressing of the grapes.
